Unique Ingredients and Flavors
These bites pack a punch of natural sweetness and satisfying crunch. Apples bring juiciness and fiber, while the no-added-sugar nut or seed butter adds creamy richness and protein. Sunflower seeds and strawberries add texture and a pop of monster personality, and edible eyes bring these creatures to life.

Instructions
Preparing the Apples
-
Cut the Apples
Slice each apple into 8 wedges, then cut a mouth-shaped wedge out of the skin-side center of each wedge to form the open "mouth."
Be careful not to cut all the way through. Use a small paring knife for control.
Assembling the Monster Apple Bites
-
Spread Nut or Seed Butter
Use a small spoon or knife to spread the nut or seed butter inside each cut-out mouth area.
A thicker spread helps hold the seeds and tongue in place. -
Add the Teeth
Press sunflower or pumpkin seeds into the nut butter along the top and/or bottom to resemble sharp monster teeth.
Mix and match patterns for different monster smiles. -
Place the Tongues
Slide one strawberry slice into the bottom of each mouth so it sticks out like a long tongue.
If strawberries are too juicy, pat dry before inserting to help them stick. -
Apply Eyes
Stick one or two candy eyes on top of the apple with a dab of nut butter as glue.
Have fun with positioning—goofy, cross-eyed, or wild-eyed monsters all work!
Note
- You can use sunflower seed butter for a completely nut-free version that’s school-safe.
- Dip apples in lemon water (1 tbsp lemon juice to 1 cup water) before assembling to prevent browning.
- To make this fully sugar-free, opt for homemade yogurt-based eyes with sugar-free chocolate chips.
- For vegan versions, make sure your candy eyes don't contain gelatin.
- Make a variety of faces to keep things exciting—some with one eye, some with many!
- Keep assembled monsters in an airtight container in the fridge until serving.
- These are best enjoyed the same day, but can hold up for a few hours if stored well.
- Try using green apples for a tart contrast or red ones for a sweeter taste.
